Hi Rachel

It took me about 2 hours (including chilling time, no mold) to make a batch. It's quicker if you have a mold because you can pipe the still-soft ganache into the cases without waiting for them to set first. Don't be surprised if they're gone in seconds as soon as you serve them!

Cheers!

I was thinking of making these for my year 12 Food and Hospitality assignment, do they take a long time to do?

Hi Jenn,

The corn flavor is strong enough to cut through the shrimp taste especially because the kernels are well charred and smoky. You may pulse the kernels in the blender to ensure they can be well incorporated with the stock during simmer. This will make your soup thicker.

Soup looks delicious but it seems to me like this is almost more of a shrimp soup with grilled corn. Do you get a good solid grilled corn flavor or is the shrimp flavor dominant?

Either way it looks great!

Hi Jeanette

The coffee pearls were referred to as sago 'caviar' in the method. I used it to top the semifreddo.

:)

What do you do with the coffee pearls? I see them in the ingredients but don't see any reference to them in the method.

Thanks Dawn! I can see that in your blog! You probably have more than 20 recipes using corn. The dock is a perfect place for grilling.

Great recipe. I love grilled corn! In fact I eat so much I think I'm turning yellow and pop in the heat.

Reginald

You shouldn't deprive yourself of bread. It's one of the basic food groups, alongside bacon, cheese and wine (in my case, a supremely chilled Grigio)!

Cheers

The herb and garlic bread is

calling my name. It's saying,

"you know you want to abandon

your silly low carb diet." And

looking at these photos, I must

admit, that sounds like a good

idea right now.

Cheers!
