Of Tropical Beaches and Fiery Fish Tacos

You’ll have to forgive me if I’m still ranting about the insufferable humidity here. It’s not getting any better. We’re still inside the monsoon season, getting patches of dry heat here and there. It rains most afternoons and unfortunately, I will have to wait a few more months before the raging weather systems quiet down.

The thought of relocating to cooler climes has definitely crossed my mind. But at the mo, it’s nowhere near practical. I’ve exhausted my supply of granita and to be honest, if I so much as put a teaspoonful of these icy shards near my mouth, I swear my teeth will scream, ‘Granita again @#$%^& ???’ Pure murder.

So I’ve decided to do something my dad taught me when I was about 8 years old. Instead of using cold to counter the heat, I’m fighting fire with fire!

Yes, I’m assembling fish tacos with just-bought tilapia fillets, my brother’s spicy mango salsa and sour cream that had been laced with hot sauce. With that much heat, I’m expecting to sweat like mad and imagining my skin beginning to feel cooler as the perspiration evaporates. Got my cold beer in one hand and a buri fan in the other, all that’s lacking right now are huge waves crashing into tropical beaches. And perhaps a few shirtless surfers parading their bangin’ beach bods for my viewing pleasure.

Hmmmm…. I’m beginning to like this sultry weather…

How Do You Like ‘Em Mangoes

If you come from a tropical country, you probably like mangoes.  Unless you have a severe allergy to it…

Unripe and still green, it teams up well with chopped tomatoes and onions to make a refreshing accompaniment to grilled pork chops.  It even makes a great pickle when marinated in a solution of beer, salt, shallots and sugar.

Ripe and fully perfumed, it serves as the star to many many desserts like the ever popular Mango Float, a Tiramisu-like layered dessert of graham crackers, cream and slices of succulent mango.

This is our take on the Mango-Sago dessert which, in its simplest form, is a chilled sago pudding served with mango slices, coconut milk and syrup.  Our version features a rich homemade vanilla ice cream, loaded with chunks of ripe mango, swirled with mango syrup and topped with sago ‘caviar.’  Here’s hoping no one has allergies to any of that!

Mango Salsa

This is just great with grilled pork chops or sticky baked ribs.  Trust me.

Ingredients:

  • 2 mangoes
  • 1 medium tomato
  • 1 medium white onion
  • 5 sprigs cilantro
  • 1 celery stalk
  • 2 whole pickled jalapenos
  • zest of 1/2 lemon
  • 2 tsp lemon juice
  • cayenne pepper
  • salt and pepper to taste

Mise en Place:

  1. Wash and thoroughly clean all ingredients.
  2. Slice mangoes and tomato into small cubes.
  3. Chop onions finely.
  4. Chop cilantro coarsely.
  5. Chop celery.
  6. Chop jalapenos.

Method:

  1. Mix all ingredients in a bowl except the lemon zest and cilantro.
  2. Season to taste. Adjust to your liking. Add sugar if it’s too sour.
  3. Garnish with cilantro and top with a generous amount of lemon zest.
  4. Serve cold.
